approx. 1 lb|
Fresh asparagus, woody ends snapped off
1 tbsp|
Extra-virgin olive oil
1/4 c|
Toasted Pepitas (pumpkin seeds)
to taste|
Flaky sea salt & freshly cracked black pepper
Method
Heat 1 tbsp of olive oil in skillet
Add asparagus to hot skillet. Season generously with salt and pepper. Cook, turning occasionally, for 4–6 minutes until they develop beautiful charred spots while remaining bright green and crisp-tender (fork-tender with a slight bite).
Spread a thick, generous layer of the Meyer Lemon Hummus onto a large, flat serving platter. Use the back of a spoon to create a few artful swoops or wells.
Arrange the hot, warm asparagus spears directly over the bed of hummus.
Scatter the toasted pepitas evenly over the top. Finish with a light dusting of Meyer lemon zest, a final drizzle of extra-virgin olive oil, and a sprinkle of flaky sea salt.
Serve immediately while the asparagus is still warm.
